One Bowl Gluten Free Banana Bread

This is one of my all-time favorite recipes – and I’ve only ever gotten rave reviews from those who have tried it. It doesn’t take up a ton of ingredients, you can prep it all in one bowl, and it’s way lower in sugar than most banana bread recipes!

Ingredients

  • 2-3 ripe bananas (3 will make the bread even more gooey and moist)
  • 1 tsp baking soda
  • 1/3 cup melted butter (I use Earth Balance, which is dairy free, but butter will work too)
  • 1/4 cup granulated coconut sugar (can also use regular sugar)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1.5 cups gluten free all purpose flour
  • 1/4 tsp xanthan gum, if your flour doesn’t already contain it
  • bit of salt
  • optional: chocolate chips, walnuts, or other add-ins

Instructions

  1. Preheat the oven to 350F and spray a 4×8 loaf pan with oil
  2. In a medium-size mixing bowl, mash the bananas until smooth/batter-like
  3. add in baking soda, then melted butter, sugar, eggs and vanilla extract, mixing until smooth and fully incorporated
  4. In batches, mix in your gluten free flour and xanthan gum
  5. Fold in chocolate chips, walnuts, etc., without mixing too much
  6. Pour into pre-oiled pan and bake for approximately 50 minutes, or until a toothpick comes out without any batter on it!
