This is one of my all-time favorite recipes – and I’ve only ever gotten rave reviews from those who have tried it. It doesn’t take up a ton of ingredients, you can prep it all in one bowl, and it’s way lower in sugar than most banana bread recipes!

Ingredients
- 2-3 ripe bananas (3 will make the bread even more gooey and moist)
- 1 tsp baking soda
- 1/3 cup melted butter (I use Earth Balance, which is dairy free, but butter will work too)
- 1/4 cup granulated coconut sugar (can also use regular sugar)
- 2 eggs
- 1 tsp vanilla extract
- 1.5 cups gluten free all purpose flour
- 1/4 tsp xanthan gum, if your flour doesn’t already contain it
- bit of salt
- optional: chocolate chips, walnuts, or other add-ins

Instructions
- Preheat the oven to 350F and spray a 4×8 loaf pan with oil
- In a medium-size mixing bowl, mash the bananas until smooth/batter-like
- add in baking soda, then melted butter, sugar, eggs and vanilla extract, mixing until smooth and fully incorporated
- In batches, mix in your gluten free flour and xanthan gum
- Fold in chocolate chips, walnuts, etc., without mixing too much
- Pour into pre-oiled pan and bake for approximately 50 minutes, or until a toothpick comes out without any batter on it!
