These mini strawberry tartes (or tartes aux fraises) are the perfect little treats! They’re fairly simple to make, since I used shortbread cookie as the base, but come out looking so fancy! Perfect for brunch or dessert!

Ingredients:
For Base:
- 1 package of Schar Gluten Free Shortbread Cookies
For Custard:
- 1 cup of milk
- 1/2 an egg
- 1 egg yolk
- 2 tbsp + 2 tsp of powdered sugar
- 1/4 cup gluten free flour
For Strawberry toppings:
- approx. 15 strawberries
- 4-5 tbsp strawberry or raspberry jam
Instructions:
- To make custard, bring milk to a soft boil in a small saucepan
- Whisk together egg & egg yolks in a bowl, then add powdered sugar and continue to whisk until it turns white
- Slowly add in gluten free flour, and then the hot milk to the bowl
- Once thoroughly mixed together, put mixture back into hot pot, and bring to a boil while stirring – then take off heat
- Place back into a bowl and cover top thoroughly with powdered sugar, or with a sheet of plastic/cling wrap (this ensures that the top layer of custard doesn’t harden)
- Place bowl in fridge to cool
- Once cooled, top cookies with a layer of custard & then press strawberry slices in
- For tart glaze, microwave jam for 30 seconds, then gently brush onto strawberries
