I was on a cobbler kick all throughout this summer. I love how easy it is to make, how much lower-carb it is than a full-on pie, and how the berries still taste so fresh and juicy after being baked! This strawberry-blueberry combo is sure to fix your cobbler craving!

Prep Time: 10-15 mins Bake Time: 35 mins
Ingredients:
- 1/2 a container of strawberries, cut into small pieces
- 1/2 a container of blueberries
- 2 tbsp cornstarch
- 1/4 cup sugar
- 2 tbsp water
- 1 tsp vanilla extract
- 3/4 cup rolled oats
- 3/4 cup gf flour
- 3/4 cup brown sugar
- 1/2 tsp baking powder
- pinch of cinnamon
- pinch of salt
- 5 tbsp melted butter
Instructions:
- Preheat oven to 350F and grease a baking pan
- mix together strawberries, blueberries, cornstarch, sugar, water and vanilla extract to make the filling – mix until fully combined, then pour into baking pan
- make the crumble topping by combining oats, flour, brown sugar, baking powder, cinnamon and salt, mixing well
- add 5 tbsp melted butter and mix again until crumbly
- add crumble on top of filling, then bake for approximately 35 minutes or until filling is bubbling and looks thick. Serve warm and topped with vanilla ice cream!
