This strawberry-banana bread is so sweet and decadent! It’s the perfect bread to make in strawberry season, or even in winter when you’re craving something sweet and have some strawberries in the freezer! It’s not only perfectly sweet, but the prettiest color too (especially when you decorate with strawbs on top) !!

Prep Time: 10 minutes Bake Time: 50 minutes
Ingredients:
- 2 ripe bananas
- 1/2 cup ripe strawberries, cut into small pieces, plus 2-3 strawberries cut into thin slices for decorating the top
- 1 tsp baking soda
- 1/3 cup melted butter
- 1/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/4 cup gf flour
- 1/4 tsp xanthan gum (if flour doesn’t already have it)
- 1/4-1/2 cup chocolate chips
Instructions:
- Preheat oven to 350F and spray a loaf pan with nonstick spray
- Mash bananas in a big bowl until smooth, then add strawberries and mash into small bits until mostly combined
- add baking soda, butter, sugar, eggs, and vanilla extract, and combine until smooth
- mix in gf flour and xanthan gum a little bit at a time until fully combined, then fold in chocolate chips
- pour into prepared pan and then decorate with sliced strawberries
- bake for 50 minutes, then let cool!
