These smashed mini potatoes make baked potatoes sound boring. They’re perfectly bite-sized & roasted, and full of flavor!

Smashed mini potatoes take a bit more time and effort than regular baked potatoes, but they’re so worth the effort – they have tons of flavor and are perfectly soft on the inside while still crisp on the outside.
Prep Time: 30 mins Bake Time: 20 mins
Ingredients:
- 12 ounces baby potatoes
- 1 tbsp olive oil
- 2 cloves of garlic, pressed & minced
- 2 tsp thyme
- salt & pepper
Instructions:
- Preheat oven to 450F and bring a large pot of water to boil
- Boil potatoes for 15-20 mins, until tender
- Place potatoes onto a lightly oiled baking sheet, and using a fork, gently press each potato down until “mashed” (be very careful doing this, as the potatoes are so tender at this point they can easily crumble under too much pressure)
- Top with olive oil, garlic and thyme
- Bake in oven for approx. 20 mins, until sizzling and browned on the outside
