Panzanella Salad

This panzanella salad is so simple to make, yet has the most amazing flavor. There’s something about peaches, burrata and red onion that just makes your mouth water! It’s light and flavorful, and is perfectly paired with a chicken dish like this rosemary chicken with white wine sauce. Panzanella also pairs so well with bacon/proscuitto!

Prep Time: 15 minutes Bake Time: 5 minutes

Ingredients:

Serves 4-5 as a side dish/small salad

  • 5 peaches
  • 1/2 a red onion
  • 1/2 cup white balsamic vinegar, separated into two 1/4 cups
  • 5 slices of gluten-free bread, cut into cubes
  • handful of chopped basil
  • 1/4 cup olive oil
  • salt & pepper to taste
  • 1/2 a package of burrata

Instructions:

  • slice red onion and marinate in 1/4 cup white balsamic vinegar while preparing the other ingredients
  • slice peaches, rub with a bit of olive oil, and grill on each side for approximately 5 minutes
  • while grilling, toss cubed bread with a bit of olive oil and salt, and bake in the oven for approximately 5 minutes at 300F
  • toss onions, toasted bread, peaches and a handful of chopped basil in a marinade of 1/4 cup white balsamic, 1/4 cup olive oil, salt & pepper
  • top with burrata, more basil, and a bit of olive oil and serve!
