I’m obsessed with making my own salsa. There’s something about the freshness of it that just makes it taste 100x’s better than anything store-bought. I also love that I can tweak the ingredients – this recipe is perfect as a base, but you can easily add more spices/take some out, add in roasted garlic (so much flavor!) or kalamata olives (they add quite a nice bite).

Total Time: 10-15 mins
Ingredients:
- 2 large tomatoes or approximately 1 pound/20 ounces, cut up
- 1 small can of diced tomatoes or around 1/3 cup strained tomato sauce
- 1-2 scallion stalks cut up
- 1/3 cup chopped red onion
- small handful of fresh cilantro
- 2-3 large garlic cloves, chopped and preferably roasted
- 1 jalapeno pepper, seeded, or a few slices of red bell pepper for milder
- taste
- 2 tbsp lime juice
- 1 tbsp chili powder or trader joes chili lime powder
- 2 tsp ground cumin powder
- 1-2 tsp cayenne pepper powder
- 1 1/2 tsp sugar
- 1 tsp salt or to taste
- approximately 1 tbsp apple cider vinegar
Instructions:
- make sure all ingredients are chopped, then add to food processor and blend until almost smooth
- season to taste
