These buffalo cauliflower bites are one of my favorite dishes, hands-down. They can easily be made as an app (think: game day food!), a side, or even as a full meal! They’re so versatile, flavorful, and satisfying.

Bake Time: 15 mins Prep Time: 35 mins
Ingredients:
- 1 head of cauliflower, cut into bite-sized pieces
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt & pepper
- 1/2 cup of water
- 1/2 cup of flour
- 1/4 cup sriracha/any kind of hot sauce
- 3 tbsp butter
- 2 tsp lemon juice
Instructions:
- preheat oven to 450F and spray a baking sheet with nonstick spray
- whisk together garlic powder, paprika, salt, pepper, flour and water until smooth
- add in cauliflower in batches, mixing around in the batter so they’re fully coated
- place cauliflower on baking sheet in a single layer and bake for approximately 20 minutes, flipping halfway through so they don’t stick to the pan
- combine hot sauce, melted butter and lemon juice, and brush liberally onto cauliflower (I don’t like my sauce super spicy so I add more butter — I recommend tasting before brushing on, and adding more hot sauce to your liking)
- bake for another 10 minutes
- serve with more hot sauce (or hot sauce & butter combo) and ranch!
