This simple gluten free toast is the perfect combo of sweet & nutty. Best on a summer day when your nectarines are perfectly ripe!
I first made this toast when I had some ripe nectarines and wanted to figure out a way to enjoy them as a meal, rather than just by themselves. And so, this toast combo was born! Using gluten free bread (I love Trader Joe’s multigrain gluten free bread), I added peanut butter, nectarine slices, coconut flakes, and a bit of honey. It seriously takes breakfast to a whole new level! Best of all, it’s super simple, and tastes amazing!

Prep Time: 5 mins Yield: 1 piece of toast
Ingredients:
- 1 piece of gluten-free bread (I used The Essential Baking Company)
- 1 tbsp peanut butter
- 1/2 a ripe nectarine
- 1 tsp coconut flakes
- 1/2 tbsp honey (optional)
Instructions:
- toast bread til browned
- spread pb on toast
- slice nectarines & place on top
- sprinkle with coconut flakes & drizzle w/ honey
- enjoy!
